Okra pistachio sauce


  • 300 gr of pistachio, crushed and soaked in 1 cup of water
  • 90 gr okra, diced
  • 2 diced tomatoes
  • 1 onion, minced
  • 1 celery stalk, minced
  • 3 chopped garlic cloves
  • 30 gr of crushed crayfish
  • 1 Kg of meat of your choice
  • 1 liter of water
  • 1 coffee cup of oil
  • salt and pepper



Salt and pepper the meat. Heat a little oil in a pressure cooker and brown the meat over high heat.

Add the onion, celery, garlic, stir and leave to sweat for a few minutes. Add the tomato, stir and leave to sweat for a few minutes.

Add the water and stir. Cover the casserole and leave the heat to high, when the casserole is under pressure, lower the heat and cook for 15 min.

When the meat is cooked, add the soaked pistachio and stir very slightly and simmer for about fifteen minutes.

Add the crayfish, chicken broth and okra, stir and simmer for ten minutes.

Check the seasoning and adjust the salt if necessary ….

Serve with the cassava couscous.
