Braised Chicken and Plantains


  • 20 ripe plantains
  • 2 green lemons
  • 15 large onions
  • 1 chili
  • 17 tomatoes
  • Thyme
  • 2 bouillon cubes
  • Basil
  • 1 large chicken
  • Pepper
  • Salt
  • 5 garlic cloves
  • A little mustard (optional)
  • 3 scallions



  • The day before, marinate the thighs in a mixture of lemon juice, crushed garlic, minced shallots, thyme, basil, salt, pepper, chilli, mustard, and broth.
  • On the same day, peel the bananas, cut them into slices and fry the previously heated Mayor oil.
  • Peel the onions and dice them
  • Also dice the tomatoes
  • Separately in a frying pan, add the chicken, onions and tomatoes and the bouillon cubes until it boils
  • Grill all under the oven grill until the pieces are cooked and golden brown.
  • Make the dish and serve hot
